It’s required by state law, it’s a prerequisite for most commercial kitchen memberships (including ours), and it’s surprisingly straightforward to get. Here’s everything you need to know.

What Is ServSafe?

ServSafe is a food safety training and certification program administered by the National Restaurant Association Educational Foundation (NRAEF). It’s the most widely recognized food safety certification in the United States and is accepted by health departments in all 50 states including New Jersey.

The program covers:

  • Safe food handling temperatures and storage
  • Cross-contamination prevention
  • Personal hygiene requirements
  • Cleaning and sanitizing procedures
  • Pest prevention
  • Food safety management systems (HACCP basics)

Do You Really Need It in NJ?

Yes — New Jersey requires at least one Certified Food Protection Manager (CFPM) at every licensed food establishment. For most small food businesses, that’s you, the owner/operator.

Beyond the legal requirement, you’ll need it to:

  • Rent space at a commercial kitchen incubator (including NJ Commercial Kitchens)
  • Apply for a retail food establishment license
  • Obtain a food truck commissary agreement
  • Sell at many NJ farmers markets (markets often require proof of certification)

ServSafe Options: Which One Do You Need?

ServSafe offers several certification levels. For most NJ food entrepreneurs, you want one of these two:

ServSafe Food Handler

A basic certification covering fundamental food safety practices. Takes about 2–3 hours online. This is the entry-level certification and is sufficient for most shared kitchen requirements.

ServSafe Food Manager

A more comprehensive certification required for food establishment managers and owners. Takes 4–8 hours plus a proctored exam. This is what NJ technically requires for “person in charge” at a licensed food establishment.

Our recommendation: Get the Food Manager certification. It satisfies all NJ requirements, is more comprehensive, and is valid for 5 years.

How to Get Certified Online

  1. Go to servsafe.com
  2. Click “Get Certified” → “Food Manager”
  3. Purchase the online course + exam bundle (approximately $175–$200)
  4. Complete the self-paced online course (can be done in segments)
  5. Schedule and take the proctored online exam
  6. Pass with a score of 75% or higher
  7. Download and print your certificate

The entire process can be completed in 1–2 days from home. Your certificate is emailed immediately upon passing and mailed physically within a few weeks.

In-Person Options in NJ

If you prefer an instructor-led course:

  • NJ Commercial Kitchens — we periodically arrange instructor-led ServSafe courses at our Hawthorne facility for our tenants and prospective members. Contact us to ask about upcoming sessions.
  • Many community colleges in Bergen and Passaic counties offer ServSafe courses through their continuing education programs
  • The NJ Restaurant & Hospitality Association occasionally offers courses

Cost Overview

  • Online self-study + exam: $175–$200 at servsafe.com
  • In-person class + exam: $100–$200 depending on provider
  • Exam-only (if you’ve studied independently): $35–$55

Given that it’s valid for 5 years and is a legal requirement, it’s one of the best investments you’ll make in your food business.

After You’re Certified

Once you have your ServSafe certificate in hand, you’re ready to:

  • Apply for kitchen membership at NJ Commercial Kitchens
  • Apply for your NJ food establishment license
  • Operate legally as a food business in New Jersey

Keep copies of your certificate — you’ll be asked for it frequently. We recommend scanning it and storing a digital copy in Google Drive or similar.
